    John Lucey Wisconsin Center for Dairy ResearchJohn Lucey (pictured) of the Center for Dairy Research at the University of Wisconsin, Madison, will address the subject “How to avoid the 10 most common defects in cheese” during a free webinar hosted by Dairy Foods on June 24 at 2 pm ET.

    Cheesemakers with a knotty problem to resolve should submit their question here. Time permitting, Lucey will answer it during the webinar. Listeners to the webinar can also submit questions.

    John Lucey is the author of The Cheese Doctor column in Dairy Foods. He is the director of the CDR and a professor of food science at the university. He has a doctorate in food science and over 20 years of research experience. He previously worked in Ireland, the Netherlands and New Zealand.

    As CDR Director, Lucey provides leadership to staff to help the center move forward and live up to its reputation as a world-class research center focused on applications, outreach and education. He is also a professor in the Food Science department and conducts research on the functionality of dairy foods. He has published more than 100 peer-reviewed articles and 20 book chapters.
