    First food-related job. East of Main, a small pub that is now gone. I washed dishes at first, and then eventually helped prep.


    Where did you learn to make cheese? Cedar Grove Cheese, Plain, Wis.


    Favorite way to eat cheese? I enjoy eating cheese at room temperature with an adult beverage, but I also like using cheese as an ingredient in a culinary creation.


    What should the public know about cheese? Cheese is living and shouldn’t be abused.


    Who is your cheese idol?Sid Cook, an artisanal cheesemaker with Carr Valley Cheese Co., La Valle, Wis.


    First memory of cheese?Deep fried beer-battered cheese curds at the state fair.


    What would you be doing if you weren’t a cheesemaker?I would probably be fermenting something, beer or bread.


    Would you bait a mousetrap with your cheese?No way. Peanut butter does a much better job!

Chalet Cheese is a farmer owned co-op and Jamie Fahrney, Master Cheesemaker, is our Plant Operations Manager. Jamie is a Master in Baby Swiss and Brick and will soon be looking into ascertaining Mastery level in Limburger. Chalet Cheese Co-op is the only factory in America that produces Limburger cheese. We also specialize in Brick and Baby Swiss Cheese. We are very proud to have 6 great Cheesemakers who have received numerous awards at the local and national level for their wonderfully crafted cheeses.
