Aux Délices des Bois, a brand of New York-based M.A.D. Foods, added Roasted Garlic butter and Red Wine Shallot butter. The butters begin with 82% minimum butterfat. This European-style fat content carries the natural flavorings better and delivers above-average mouthfeel, the company said.  Roasted Garlic butter has a nutty rounded flavor that may be used to simplify preparation of dishes such as linguine with clam sauce, garlic bread and escargot. Red Wine Shallot butter’s sweet/winey notes can accent red meat, stewed veggies, fish and sauces.
