The ghee comes from ethically sourced dairy — from cows that are free to roam and forage in open pastures on family farms, Vital Farms said. The offering is lactose- and casein-free due to the clarifying process of cooking down the butter, which removes the water and milk solids. Ghee also has a high smoke point, so it doesn’t burn or chemically alter at high heats, making it great for frying and sautéing. The Vital Farms butter used to make the ghee has a higher-than-industry-norm butterfat content, and this rich, complex flavor is preserved during the ghee-making process.
