Portland, Ore.-based Ruby Jewel, an artisan ice cream company, introduced three new ice cream sandwich flavors — oatmeal chocolate chip cookie with butterscotch ice cream, chocolate chip with caramelized coffee ice cream and brown sugar cookie with strawberry ice cream.  The company sources its ingredients from local, sustainable and organic farms and food producers. The 5-ounce ice cream sandwiches are sold for a suggested retail price of $3.49 to $3.99 each and are available at the company’s scoop shops and distributed in the Pacific Northwest.
