    For coloration of fat-based products

    CaroCare 30%S from DSM Nutritional Products is a naturally sourced beta-carotene solution for coloration of fat-based products such as cheese. One of the offerings in the DSM Carotenoids line, this product can improve the look of processed cheeses as well as add to shelf-life by providing color stability, according to the company. DSM Carotenoids can bring more color consistency to formulations and help products resist the “pinking” that can occur with some cheese colors.

    Blue fruit juice concentrate for beverages and foods

    Naturally derived from fruit, Wild Flavors’ Fruit Juice Concentrate Blue can be used to create a wide range of differentiated beverages and foods. It provides the foundation for other colors including green, purple and an expansive palette of new color options not previously available naturally. It is also compatible across the pH range. Called Acid-Stable Blue, it easily blends with other products in the company’s Colors from Nature line.

    Eliminates need to bleach colored whey 

    WhiteWhey from Chr-Hansen offers a 1:1 color match compared to existing annatto cheese color. This product enables users to color cheese with beta-carotene as it occurs naturally in milk, and eliminates the need to bleach colored whey, simplifying the production process and saving time and money. The product also helps avoid off-flavor and allergen issues associated with alternative color solutions and bleaching chemicals. It is also able to fulfill regulations on whey used for infant formula.

    Line of natural colors emulsions for use in dairy applications

    DDW has expanded its EmulsiTech line of natural colors emulsions to include paprika and beta-carotene for use in dairy- based applications such as milk, yogurt and smoothies.     Food Ingredient Solutions offers vegetable juice colors 856 and 857. These two colors are natural, plant-derived and contain no allergens. VJG 856 is formulated for use in the pH 3.8-4.6 range and is designed for yogurts, yogurt drinks, etc. VJC 857 is formulated for use in the pH 6.5-7.5 range and is designed for ice cream and flavored milks.     Naturally sourced colors for dairy applications

    Kalsec offers a full range of yellow, orange and pink to red hues derived from carrot,

    turmeric, annatto, paprika and anthocyanins. Combinations of these colors in both oil- and water-soluble versions are also available. Its beet extract, as well as its colors from black carrot, yam and radish, deliver appetizing shades of pink.     San Joaquin Valley Concentrates’ colors are from natural sources such as fruits and vegetables, and are available in a variety of red, pink and purple shades. Their crystal colors are carrier-free, easily soluble, and have a five-year shelf life at ambient temperature.
