    Sweet and savory flavors for Greek yogurt

    Recognizing the trending upswing in consumer awareness, interest and demand for Greek yogurt products, Comax Flavors, Melville, N.Y., has created a range of highly appealing flavors that ideally complement Greek yogurt’s creamy texture and its broad recipe potential, both in sweet and savory dishes.



    Recognizing the trending upswing in consumer awareness, interest and demand for Greek yogurt products, Comax Flavors, Melville, N.Y., has created a range of highly appealing flavors that ideally complement Greek yogurt’s creamy texture and its broad recipe potential, both in sweet and savory dishes. These flavors include such tempting varieties as purple plum, cinnamon bun, cucumber, cherry black currant and baklava.

    According to Gladys Slovis, applications lab manager for Comax Flavors, “With its unique body, silky mouthfeel and satisfying richness, Greek yogurt offers the ideal vehicle to showcase our ability to create a wide variety of true-to-life flavors to suit a given product application. Even at 0% fat, Greek yogurt tastes decadently rich, making them very suitable for sumptuous dessert flavors like baklava and cinnamon bun. It’s well within our powers to develop any number of concepts - the sky’s the limit.”

    Many consumers enjoy the firmer texture of Greek yogurt by itself; just as many if not more are finding that in cooking, Greek yogurt promises a healthy new level of nutrition - adding body while using less fat - along with a pleasing touch of ethnic fusion. With the whey removed, Greek yogurt has a consistency somewhere between that of cheese and typical yogurt. It is generally used in Greek cooking, as a base for dip and paired with sweet toppings for dessert. But it lends itself well to a world of cuisines, ranging from American to Mediterranean, Middle Eastern, Asian, Indian and even Mexican cooking - from the appetizer to an accompaniment for a main course, and through to dessert.

    Slovis continues, “Greek yogurts make a wonderful base from which to create rich sauces without adding the fat otherwise needed to attain the same qualities. With flavors like cucumber dill, curry, garlic ginger, chili spice, etc., these sauces can complement meat or fish, or take on a leading role as exotic dips for chips and vegetables. Naturally, when formulating products using Greek yogurt, one must take into consideration that the product may need a heightened intensity of flavor as compared to regular yogurts that are thinner in texture and lighter in mouthfeel.
