    Thermo Fisher Scientific Unveils Guided Microwave Spectrometer for In-line Food Analysis

    Thermo Fisher Scientific Inc. rolled out the Thermo Scientific ε scan, an in-line guided microwave spectrometer (GMS) that is uniquely designed to analyze and measure multiple key properties of food products to improve costs, quality and brand value. In today’s food processing plants, many analyzers are at-line. The ε scan moves the analyzer into the process stream, providing real-time, accurate process information and enables users to save time, materials, production capacity and energy.

    “The ε scan marks a significant step forward in food processing technology – its ability to deliver consistent measurements and generate usable data eliminates the need for multiple laboratory samples, saving both time and valuable resources,” said Rick Cash, marketing technology manager for Thermo Fisher Scientific, based in Waltham, Mass. “Unlike other in-line measurement systems that penetrate only millimeters into the product, the ε scan measures through the cross section of flow allowing users to control their processes with more accuracy and efficiency.”

    Ideal for food processors in the meat, dough, dairy, confectionery, nut butters and emulsions industries, the ε scan can measure bulk properties of a process material down to a fraction of a percent. The system measures properties such as moisture content, fat, protein, salt and other properties, including brix, total solids, water activity and viscosity, depending on the product. In meat applications, the ε scan’s GMS performance is superior compared to alternative options and offers significantly faster payback.
