Westby Cooperative Creamery, Westby, Wis., ships cheese products to New York and high-protein organic Icelandic-style yogurt to the West Coast. Conventional yogurt is bound for Kentucky, the co-op also makes Greek yogurts, cottage cheeses, cream cheeses, sour creams, dairy dips, 14 varieties of hard cheeses and cheese curds. The creamery is the state’s only manufacturer of cottage cheese.
