Food Safety Risk Analysis using Membrane Autopsy
Membrane programs in the age of FSMA require increased vigilance to maintain the safe production of food products. Under FSMA a company must do a risk based analysis to identify potential hazards. Within the new Food Safety Plan, preventive controls must be in place to manage those risks. One unique tool to evaluate the effectiveness of the Sanitation Controls is the membrane autopsy. When coupled with a complete system review, these two can assist the food manufacturer to produce a safe and reliable product. This presentation focuses on FSMA and how it relates to membrane maintenance and trouble shooting. An overview of autopsy techniques, what to look for, and how to diagnose the problems based on the condition of the membrane elements will be covered.
