ADM Cocoa recently launched Fresca Cacao and cocoa specifically suitable for dairy applications, and fruity and acidic drinks. Chocolate and cocoa have fairly strong bitter notes that typically don’t combine well in acidic environments; however, ADM Cocoa’s Fresca Cacao opens a door for such applications. ADM Cocoa has developed a proprietary process for the production of Fresca Cacao. As a result of this process, Fresca Cacao has a unique flavor profile of very mild bitter notes and an enhanced fruity and fresh impact. This makes the powder very suitable for dairy food applications with lower pH levels. A few application examples include yogurt drinks, frozen yogurt and yogurt mousse.
