To deliver a better and faster response to customer requests, Chr. Hansen recently opened a new dairy flavors pilot plant within the company's North American headquarter facilities in Milwaukee, Wis. The new pilot plant is instrumental in customer scale up projects, sample development and application development in processed cheese, fermented dairy products and cheese sauces. The facility is equipped with a full line of dairy equipment. A double compartment cheese vat, cheese press and cheese shredder can be used for natural cheese flavor studies and for research on flavor release and retention on cheese curd. A colloid mill, PD pump, homogenizer, jacketed tank and a

Groen kettle are used for manufacturing pasteurized processed cheese and sauces, and product development of enzyme-modified and fermented dairy flavors. For more information, please contact Farshid Eftekhari at 800/558-0802 or FEftekhari@chr-hansen-us.com.
