NDS and Virginia Dare have teamed up to present "Winning Combinations," a variety of new, frozen desserts. These one-of-a-kind taste treats combine unique flavor profiles and notes created by Virginia Dare's R&D team, and some of the specially created cones, wafers and inclusions that have made NDS the leading source of products, systems and ideas for the ice cream novelty industry.

Examples include Bourbon Vanilla and Peach Cobbler ice cream sandwiches, Dulce de Leche and Coffee flavored ice cream cones and Key Lime and Pear Anisette cups.

Denali Flavors Inc., Wayland, Mich., has acquired a key ice cream ingredient manufacturing operation from Toronto-basedCoolBrands International.

Denali, which licenses such ice cream flavors as Moose Tracks® and Bear Claw®, will reportedly pay $10 million for the business, including a 65,000 sq ft production plant in New Berlin, Wis.

The launch is in conjunction with TransFair USA, the only independent, third-party certifier of Fair Trade Certified products in the United States. Glanbia plc, has acquired a California based nutritional business, Seltzer Companies Inc., at a total cost of $105 million. Seltzer is a leading U.S. nutritional solutions company with strong expertise in the development of customized nutrient formulations and the distribution of specialty ingredients for the nutritional supplement, food and pharmaceutical markets.

Cannon Equipment, Rosemount, Minn., has taken one of its standard palletizer models and redesigned and modified it to match the customer's specifications to handle large 500-lb barrels of cheese. Cannon is a leading design, engineering and manufacturing organization with a long history of providing automated material handling systems to match its customer's requirements.

Chr. Hansenhas launched six new cultures within the Yo-flex® and Nu-trish® segment that offers up to 20% more texture in the final yogurt. The higher texture makes it possible to develop low fat or no fat products and still maintain creaminess and smoothness. The new Chr. Hansen cultures provide the possibility to naturally decrease the use of fat and sugar in yogurts through strains unique for their low post acidification producing a mild flavor. Further, some of the new cultures contain well-known, documented probiotic strains - BB-12® and LA-5®. The new culture names are: YF-L901, YF-L902, YF-L705, YF-L706, ABY-10 and ABT-10. Chr. Hansen has carefully tested all new cultures in industrial scale yogurt plants before market introduction.

Atwater Foods LLC, Lyndonville, N.Y., producer of premium dried fruit, has added a new multi-stage continuous drying facility in Traverse City, Mich. The new plant is located adjacent to some of the large Montmorency tart cherry orchards owned and operated by the partners of Atwater Foods. The versatility of having two plants in conjunction with the owners being the largest tart cherry growers in North America, will give Atwater Foods the capability to produce substantially more premium dried cherries, dried cranberries, dried blueberries and dried apples, the company says.

3M Microbiology, St. Paul, Minn., has received validation of its 3M Petrifilm Environmental Listeria (EL) Plate through the AOAC Research Institute (AOAC-RI) for the detection of Listeria on environmental surfaces in food processing plants. Validation studies compared the 3M Petrifilm EL Plate's performance to the United States Department of Agriculture Food Safety and Inspection Service Most Probable Number (USDA-FSIS MPN) Method. AOAC-RI found that the 3M Petrifilm EL Plate's performance is equivalent to that of the USDA-FSIS MPN Method for detecting Listeria species on environmental surfaces such as stainless steel, plastic, ceramic tile, and sealed concrete.
