Milk is nature’s perfect food. We have used milk in fluid and dry forms in the food industry for a century. Technologies have been developed over the years to fractionate milk into many unique ingredients that deliver customized functionality and nutrition to food applications. We continue to discover new things about milk and the dairy complex but we still have much to learn. This presentation will give you a fresh new look at milk and the latest research on new dairy derived ingredients.

From milk powders, protein isolates, lactoferrin, to cream cheese…membrane filtration is a core technology for producing all these dairy products. Getting back to the basics, this presentation will cover the full range of possibilities and applications in the dairy industry with membrane filtration. We will define product limits, processes, and key things to consider when using membrane filtration to produce a variety of dairy products.

Membrane technologies have been the heart and soul of our dairy business. In the past few years, we initiated a program to identify the best performer for each of our membrane applications (MF, UF, RO, NF, brine UF) by evaluating membranes available in the market. Until today, we have placed the best performers for each of our applications. During the evaluation, we also identified the opportunities that membrane suppliers could make further improvements and have big impacts on performance of its membrane products. In this presentation, the findings and opportunities will be discussed.

Conventional spiral wound membrane elements used in the dairy industry experience a considerable amount of bypass flow in the space between the element and the housing wall. Since this portion of the feed solution does not contact the membrane surface inside the element, pump energy spent on the bypass flow does not contribute to the overall concentration process. In this presentation, we will focus on several case studies that assess the amount of bypass flow and power consumption required for the Optum RO element compared to caged and other shelled elements when operated at similar pressure drops and recoveries. Results of these studies have allowed for the quantification of bypass flow and power consumption for each element design which, in turn, has allowed the Optum RO element to become the first in its class to receive a custom energy-saving incentive from Wisconsin’s Focus on Energy Program.

In recent times, the advent of ChatGPT has sparked a surge in public fascination with Generative AI. This session aims to delve into the concept of Generative AI, exploring its diverse applications within the industrial landscape and across departments. The primary focus lies on harnessing Generative AI to optimize production processes. Through a case study on membrane filtration equipment, we explore how Generative AI can revolutionize performance and efficiency. Additionally, we discuss the considerations of integrating Generative AI into our business operations and provide insights into the future outlook of this technology. Join this session to uncover the transformative power of Generative AI in industrial settings.
