Westby Cooperative Creameryhas extended the shelf life of its cottage cheese products to 50 days. Its small curd cottage cheese won the Gold Medal as Best in Class in the 2010 World Championship Cheese Contest.



Westby Cooperative Creamery has extended the shelf life of its cottage cheese products to 50 days from the date of manufacturing. (Shelf life was 45 days.) The five-day extension includes Westby brand and private-label cottage cheese products for retail, foodservice and ingredient usage, including the 6-ounce single-serve products. The exception is its dry curd cottage cheese, whose shelf life remains at 28 days from the date of manufacture.

The creamery said it has been able to extend
the shelf life of its cottage cheeses for several reasons, including daily deliveries of fresh milk, modern production facilities and outstanding technical knowledge. Westby’s small curd cottage cheese won the Gold Medal as Best in Class in the 2010 World Championship Cheese Contest.
