New lactase improves production of lactose-free dairy products Novozymes launched Saphera, a lactase enzyme that enables new innovation in lactose-free and fermented dairy products, including yogurt. Originated from Bifidobacterium bifidum, Saphera differs considerably from traditional lactases made from yeast. With this enzyme, the desired lactose level can be more precisely measured and easily reached because less oligosaccharides (carbohydrates) are formed during the reaction compared to yeast lactases, particularly when producing 0.01% lactose-free milk, according to the company. Saphera converts lactose in dairy to galactose and glucose. This enables the dairy producer to reduce the amount of added sugars and still achieve the same degree of sweetness in lactose-free dairy products, said the company.
SPX Flow recently donated equipment to the University of Wisconsin – Madison dairy plant. The equipment, which includes a sanitary mixer and one of the company's latest innovative centrifugal pumps, will play a key role in helping the dairy produce a flavorful assortment of milk, cheese and ice cream, according to SPX.
