Thanks to a proprietary encapsulation process, manufacturers can now utilize free sterols as an ingredient during the manufacturing process without the use of special equipment or any organoleptic effects in the finished end product. Kerry’s encapsulation process allows the use of free sterols in beverage products, which result in a lower cost per serving than using sterol/stanol ester products. Stable in acid systems and easily dispersible in beverages such as juice and milk, Kerry’s plant sterols are retort and UHT stable as well as bake stable. Kerry’s plant sterols are processed in a dry powder form for ease of use in a variety of commercial food and beverage applications.

The Joy of Soy

Virginia Dare<br>
As consumers become increasingly health conscious and look for more ways to improve diets with benefical foods, dark chocolate has become popular because of its flavonoids. Studies show flavonoids keep cholesterol from gathering in blood vessels and help reduce the risk of blood clots. The Benjamin P. Forbes Company now offers a dark chocolate milk that will help dairies take advantage of this health-and-wellness lifestyle. It is processed like chocolate milk, but contains real chocolate along with cocoa powder to give it more appeal.

In 2005, AC Nielsen found that soy-based drinks are the fastest-growing drink category in the world, with a growth rate of more than three times that of energy drinks. To serve that exploding market, the 4Soy initiative was created, which brings together four leaders in the food industry. They are Devansoy, Virginia Dare, FMC BioPolymer and TetraPak, and they worked together to create Benesoy proteins, which are mild in flavor and provide a creamy mouthfeel.

By teaming up Benesoy with Virginia Dare’s fruit flavors and FMC’s stabilizers, the four companies have worked to improve the taste of fruit beverages, cereal, smoothies and energy drinks.
