The 3-A Sanitary Standards and Accepted Practices define hygienic design requirements to ensure the cleanability and inspectability of food processing equipment.
3-A Sanitary Standards have a long history of use for the design and operation of equipment and utensils in the manufacturing, processing, packaging and storing of milk and dairy products.
Equipment without a 3-A Symbol may cost less than equipment bearing the symbol, but buyers must be aware that the price paid for equipment is often not the actual cost.
Integrating processing and packaging requires the process to be well-specified in terms of design and technical expectations. Global and local standards play an important role and need to be considered for every single piece of equipment purchased.
The association’s ‘buyer beware’ list has more than doubled in size since June to include 15 companies.

3-A Sanitary Standards Inc. says that a number of Chinese companies are displaying its trademarked 3-A Symbol without authorization. Dairy processors should verify that equipment meets the 3-A SSI’s sanitary design and fabrication criteria.
The FDA soon will publish the final rules on Preventive Controls for human food and animal food and on Sanitary Food Transportation. These rules are more proactive and processed-oriented than previously required.
