Three Membrane Filtration Strategies for Yogurt Production
Membrane filtration is widely used for concentration of fermented milk to produce Greek style yogurt. The use of ceramic, spiral and plate & frame systems can be used for concentration. This presentation will cover the three different membrane configurations for processing fermented milk i.e.; yogurt, skyr, and other fermented products. Product quality differences using these systems will be discussed, as well as differences in TCO.
