New from Schuman Cheese are Cello Cheese Flights. Featuring a trio of curated high-end cheeses paired with recommendations for complementary beer and wine pairings, the flights offer a low-risk way for consumers to explore new flavors, the Fairfield, N.J.-based company said. The first-to-market flight features Cello Copper Kettle, the only U.S. Parmesan made using a traditional copper vat. It also features two award-winning cheeses from the Yellow Door Creamery brand: Altu, a Gruyere-style cheese with notes of fruit and an earthy, nutty finish; and Tuscan rubbed fontina, a hand-rubbed fontina with a smooth, creamy texture and blend of Italian herbs and spices on the rind. A 28-gram serving of the Altu cheese has 120 calories, 10 grams of fat, zero grams of sugar and 7 grams of protein. The flights will be offered at select retailers in 10-ounce trays for a suggested retail price of $12.99.
