Albany N.Y.-The New York Culinary Olympic team received silver and bronze medals at an International Culinary Olympics competition held in Germany recently. McCadam Cheese, based in Chateaugay, N.Y., is a sponsor of the New York team. Its award-winning cheeses were used by the local chefs in the competition.
Dale Miller, a certified executive chef with Jack's Oyster House in Albany, and a member of the American Academy of Chefs, received a Silver medal for his seven-part appetizer creation "Festive Adirondack Woodsman Game Platter," which consisted of pheasant galantine, smoked venison pastrami, rabbit mortadella and duck confit. Frank Costantino, New York City Technical Culinary Professor, received a bronze for his assortment of six appetizers and complete main course meal.
