    James Carper
    August 14, 2012

    August 20, 2012
Remember the Coke-Pepsi wars of the late 20th century when the giants battled each other over soft drinks? That competition may be over, but a new one could break out on different turf: the dairy case. Let me tell you about real Greek yogurt

There is Greek-style yogurt and then there is Greek yogurt made in Greece. Olympus Dairy International follows an 80-year-old family recipe that yields a thick texture and creamy taste
    Anastasios Baradakis
    August 23, 2012
Greek yogurt has seen a dramatic rise in popularity in America over the past year, but many people don’t realize that the yogurt they are picking up on a daily basis is Greek-style yogurt, not actual Greek yogurt. August 17, 2012
Communities, industries, businesses and consumers are seeking options to incorporate renewable energy for many reasons, whether it is to offset the rising cost of fossil fuels, to be energy independent or to reduce the strain of a growing population depleting finite resources.

    Sweeteners for dairy beverages

Americans are trying to add more protein to their diets. One way is with beverages. Selecting the appropriate sweetener for a protein beverage can be challenging.
Sharon Gerdes Health and Wellness editor of Dairy Foods
    Sharon Gerdes
    August 16, 2012
Protein is hot. According to a recent survey by the U.S. Dairy Export Council, Arlington, Va., 54% of U.S. consumers say they are trying to get more protein in their diet. One way for consumers to boost the protein content of their diet is via protein drinks. Whether they are high-acid or low-acid, chocolate or vanilla, fruit-flavored or coffee-based, virtually all protein drinks contain a sweetener.

Ice cream revenues rise but unit sales are melting

Ice cream processors booked greater sales revenues in the last year, but unit sales in the category tumbled 4%. It’s the same for novelties. Frozen yogurt, on the other hand, tells a different story.
    August 17, 2012
Is the constant drumbeat about Americans’ obesity problem taking its toll on sales of frozen dairy indulgences? Or has the product become too expensive in this stagnant economy? Or is there another explanation for the drop in unit sales of ice cream?

    James Carper

Everyone knows the woes of milk consumption. It has been in a steady decline for years. Once a person exits the ‘tween years and enters the teens, milk is about as relevant as a subscription to Tiger Beat magazine. Prebiotics and health: a compelling story

As scientists learn more about prebiotics, dairy’s prospects increase. For the present time, look to plants if you want to add prebiotics. But for the future, prebiotics could come from the oligosaccharides in whey permeate.
    Karen Giles-Smith MS, RD
    August 16, 2012
Although 72% of Americans are aware of prebiotics’ association with digestive health, according to the International Food Information Council’s 2011 functional foods survey, most would be hard-pressed to describe prebiotics and their functions. That’s understandable. The story of prebiotics and health is not simple. But as scientists learn more, the story becomes more compelling and worth the telling.
