    David Michael launches Flavor Sensations

    David Michael & Co. offers a number of flavor modifiers that can assist manufacturers in achieving a more flavorful and oftentimes healthier product.


    David Michael & Co. offers a number of flavor modifiers that can assist manufacturers in achieving a more flavorful and oftentimes healthier product. In addition, there may be opportunities for cost savings.

    Responding to rising concerns and consumer requests, some food manufacturers have already begun reformulating existing lines with less salt. But because salt adds to and enhances the flavor of food, products with reduced salt can also lack a signature flavor.   To address the need for sodium reduction, without flavor reduction, David Michael created a line of salt replacers. DM Choice Natural Flavor Salt Type allows up to a 30% reduction of sodium, but delivers the same amount of flavor impact. It’s also free of HVP and added MSG.

    David Michael’s salt replacers are available in powder form, and can be used in any product that is formulated with salt. In addition, David Michael also offers a line of DM Choice natural potassium blockers type that can be used to decrease the bitterness and metallic off-notes often associated with potassium salts.

    Sweetness enhancers can help to enhance the overall sweetness perception of a product, and smooth-out its sweetness profile. In some cases, sugar extenders may be used to reduce the amount of sugar used in that product. These flavors can also help to reduce the aftertaste of an artificial sweetener or mask bitter off-notes.

    Sweetness enhancers also enhance and brighten-up naturally sweet flavor types, such as maple and vanilla. They are available in liquid and powder forms, in natural, artificial or natural and artificial. These enhancers can be used in a number of applications, including cereal, baked goods, dairy, frozen desserts and yogurts.  

    Sugar Extenders are used to keep a similar sweetness perception. They are available in liquid and powder forms, natural, artificial or natural and artificial. Burnt sugar flavors are also available.

    At the other end of the spectrum, sweetness inhibitors are used to decrease the sweetness impact of products with inherent, undesirable sweetness. For example, a sweetness inhibitor can be used in a lactose-free milk to lower the sweetness level down to that of skim milk. Sweetness inhibitors are available in liquid or powder and are artificial flavors.

    David Michael offers a number of masking flavors that can be used to cover bitterness, astringency, medicinal, metallic or general flavor off-notes. These may be combined with sweetness enhancers, acidity/astringency blockers and more, for added functionality. Natural Flavor Acidity Blocker Type and Natural Flavor Astringency Masker Type are available in liquid form, and labeled as natural. They can be used in many applications, including pharmaceuticals, nutritional beverages, cereals, baked goods, nutritional bars and soy products.
