IDI Develops Innovative Process For Hard, Soft Cheeses

IDI (Ingredia Group) says it has revolutionized the cheese manufacturing world with the technology without whey separation: cheasing’up. This innovative process enables to produce a wide range of cheese: hard cheese, soft cheese, fresh cheese and also processed cheese. cheasing’up brings many advantages to the process. Its logistical flexibility avoids the processing of by-products and reduces the number of manufacturing steps: no curd cutting, no draining and no brining. Beyond the flexibility of the technology, gains on operational costs and investments can go up to 60% compared to a traditional process.

Its R&D team helps processors develop recipes and formulations according to their specifications (availability of raw materials, compliance with custom duties, etc). The products can be tested on IDI's semi-industrial tool.
