Belgioioso’s Classic Italian Parmesan cheese is now available shaved in 5-lb bags for foodservice. Aged in special curing rooms for more than 10 months, Parmesan cheese from Belgioioso Cheese Inc., Denmark, Wis., is known for its sweet, nutty flavor. The new product gives foodservice operators the convenience of pre-shaved cheese without sacrificing taste.

Kraft Foods, Northfield, Ill., now offers its Kraft Parmesan cheese in restaurant-style shakers, enabling consumers to bring their favorite Italian restaurant experience home to their dinner table.

Springdale Cheese Factory, Richland Center, Wis., rolls out the Fuente del Valle specialty cheese line that combines south-of-the-border flavor with milk from the rolling hills of the Kickapoo Valley in southwestern Wisconsin. The line includes seven Hispanic varieties: Anejo Enchilado, Cotija, Enchilado, Manchego, Queso Blanco, Queso Fresco and Queso Quesadilla.

Monroe, Wis.-basedRoth K¿now offers Sol¿anina. This cheese is reminiscent of an artisinal Spanish Queso. It took first place honors in the Hispanic and Portuguese Style Cheese category at the American Cheese Society annual meeting this past year.

Reilly Dairy, Tampa, Fla., an international master distributor of 1,800 dairy products, presents El Dorado de Wisconsin, a line of five traditional, Hispanic-style cheeses produced exclusively by one of Wisconsin’s cheese manufacturers. The line includes Crema Mexicana, Queso Blanco, Queso Cotija, Queso Fresco and Queso Quesadilla.
