PALATINIT

Palatinose™, a new functional carbohydrate from PALATINIT, has been approved by the European Commission for use in the European Union (EU) in all foods and beverages. In the US, Palatinose has generally- regarded-as-safe (GRAS) status, making it suitable for use in foods and beverages here as well. Palatinose™, also known under the generic name isomaltulose, is a unique sugar that can help reduce the low glycemic and low insulin response of foods. Palatinose is exclusively derived from sucrose and can be found as a natural constituent of honey and sugar cane. Like sucrose, it is fully digested, providing the same calories. Unlike sucrose, Palatinose is tooth-friendly and digested much more slowly. Palatinose is a slowly released carbohydrate that provides a ‘better energy' in food and dairy drinks.

The LycoRed Group

FDA is amending its color additive regulations to provide for the safe use of LycoMato® tomato lycopene extract as a color additive in foods. This action is in response to a Color Additive Petition (CAP) filed by LycoRed Natural Products Industries. The ruling, effective August 26, 2005, adds LycoMato® to the FDA's listing of Color Additives Exempt from Certification. FDA evaluated two LycoMato® concentrations: One containing not less than 5.5% lycopene (referred to as tomato lycopene extract); and the other containing not less than 60% lycopene (referred to as tomato lycopene concentrate). LycoRed's patented manufacturing processes and related studies also were part of the evaluation process. Lycopene is a truly natural food colorant, whose coloring ability depends on its concentration, the method of dispersion and formulation used. LycoMato® is already marketed as a food colorant in Europe and Japan. LycoMato®, a standardized tomato oleoresin, contains a high concentration of lycopene, partially dissolved and mostly dispersed in tomato oil.

Advanced Instruments, Inc.

Norwood, Mass.-based Advanced Instruments, Inc. has introduced the CombiScope™ Analyzer, which performs both milk composition analysis and somatic cell counting for rapid milk testing in dairy labs. The CombiScope combines a spectrophotometer using established infrared technology for elemental analysis, plus FDA-approved, fluorescence flow cytometry for counting somatic cells. The dual-purpose analyzer quantifies the amount of fat, protein, lactose, and solids content in milk and milk products, and measures the total number of somatic cells in raw milk. The company also announces the availability of the CombiScope FTIR analyzer, a version of the CombiScope platform with Fourier Transform Infrared technology that provides component analysis, calibration transferability, and high throughput.

Mastertaste

Mastertaste of Lakeland, Fla. has introduced Steromulsions™, which are flavored beverage emulsions containing sterol esters. Sterol esters are endorsed by FDA for their cholesterol lowering benefits. Since sterol esters do not naturally mix well with water, the beverage industry has not been able to capitalize on these benefits. Mastertase has created a range of Steromulsions to deliver these health characteristics. Mastertaste's patented technology permits sterol esters to disperse in aqueous matrices to help develop great tasting, functional beverages, the company claims.

Satisfy Consumer Expectations with Flavors

Danisco has developed a new way of ensuring that food and beverage products live up to consumer expectations - by harmonizing flavors with other food ingredients and, for the first time, human flavor perceptions. This approach has already resulted in the first Commonsense™ Flavors in natural, nature-identical and heat-stable formats for beverage and dairy applications.

One of the key technologies behind Commonsense™ Flavors is proton transfer reaction-mass spectrometry - PTR-MS - which makes it possible to measure the flavor components released while natural and processed foods and beverages are being consumed. Using these measurements, it is possible to obtain a precise picture of how consumers perceive the taste of the food they eat and the specific components behind consumer preferences-data that is then employed in the development of highly targeted flavors.

Human perception and recognition of a particular food is mainly based on the aroma components released during consumption. A series of anatomical and physiological factors contribute to this oral release and the transfer of aroma signals to the brain. Using PTR-MS technology, Denmark-based Danisco measures the rise and fall of key flavor chemicals during chewing, swallowing and breathing. The flavor chemicals are measured in samples taken from the nasal cavity, focusing particularly on the breath expelled during swallowing, the major contributor to aroma perception.

In addition to analysing the flavor release profile of natural products during consumption, Commonsense makes it possible to observe how flavors are released from all kinds of food and beverage formulations.

Scientists Document Ability to Enhance Dietary Calcium Absorption

Cargill's Oliggo-Fiber® inulin may play an important role in America's desire to boost fiber intake and calcium uptake. A growing number of scientific studies are demonstrating inulin's ability to enhance dietary calcium absorption and potentially improve bone mineral density. This is in addition to this natural fiber's contribution to the total dietary fiber content of the American diet.

Natural chicory fructan inulin from Cargill's inulin supplier, Cosucra Group Warcoing, was used in a recently published study by Kyung Hee University in Seoul, Korea. Results found that two 4g servings of this fructan fiber, specifically Oliggo-Fiber Instant inulin, may increase calcium uptake in post-menopausal women by as much as 42%. These findings echo previous studies on inulin's potential calcium retention benefits, which are thought to be a result of the ingredient's ability to lower pH within the colon, thus improving calcium's solubility.

Calcium absorption is of particular importance to post-menopausal women, who are at higher risk for osteoporosis, especially if they don't take hormone replacement therapy. Recent estimates suggest that 30% of Caucasian post-menopausal women in the US have the disease, and other reports estimate that this group's true intestinal calcium absorption rates are between 28% and 32%.

Lantech

Lantech's new C-300 case erector delivers reliability for a machine in the 10-case/minute speed range, utilizing a proprietary design that holds the case square and erect throughout the process. The C-300 comes standard with a powered infeed magazine and automatic case-on-demand operation. The powered infeed allows for a low, horizontal magazine position for easy loading and operator ergonomics. From the infeed magazine, a hinged pick-up frame grabs the case on two panels using suction cups. By gripping two panels and squaring the case with the pickup frame, even irregular or damaged case blanks are controlled through opening, then held square and erect for flap closing. Special slots in the major flap folders prevent sideways movement of the case while it is pushed into the exit drive. There, it is gripped on the sides between two belt drives that pull it across the tape head.
